Crockpot rices have become a staple of American diets.

In a small pot, heat the butter or oil until hot.
Add the rice, water, cilantro and salt and cook over medium heat, stirring constantly, until the rice is cooked through.
It should be very tender, but not mushy.
Pour the cooked rice into the crock and cover with water.
Bring to a boil and cook for 15-20 minutes, stirring occasionally.
Remove the crocks lid and stir in the chicken, egg and salt.
Pour in the shredded chicken and season with salt and lemon juice.
Pour over the rice.
Cover and cook until the rices rice is completely cooked, stirring often.
Serve immediately with tortillas, tortillas of your choice or tortilla chips, if desired. 7. Enjoy!
