If you’re looking for a great recipe to make in the microwave for rice or other vegetable dishes, this cauliflower, rice, and potatoes recipe is a great one.
The recipe uses a microwave oven to cook the cauliflower and rice together in a very quick and easy way.

We used cauliflower in this recipe and you can use whatever cauliflower you have on hand, or you can make this recipe with any other kind of cauliflower.
1 cup cauliflower (about 4 cups) 1 tablespoon olive oil 2 medium carrots 1 medium onion, diced 1 garlic clove, minced 1/4 cup chopped parsley 1 tablespoon dried thyme 1/2 teaspoon dried rosemary 1 tablespoon fresh thyme, chopped 2 cups cooked rice (or other vegetable) 1 cup shredded carrots 1 cup cooked rice and/or other vegetables 1 cup grated zucchini 1 cup zucchi, diced 2 cups shredded carrots, diced 3/4 teaspoon salt 1/8 teaspoon black pepper 2 cups vegetable broth 1/3 cup cooked corn, drained (for more corn to add to the rice, we used about 1 cup corn kernels) Instructions Preheat oven to 425 degrees Fahrenheit.
Spray a 10-inch cast iron skillet with nonstick cooking spray.
Heat the olive oil in a large skillet over medium heat.
Add the onion, garlic, carrots, and onions.
Cook for 2 to 3 minutes, stirring occasionally.
Add parsley, thyme and rosemary.
Cook until the parsley is softened and slightly browned, about 1 minute.
Add all of the other ingredients.
Bring the skillet to a boil, then reduce the heat to medium-low.
Add in the rice.
Cook uncovered, stirring frequently, for 5 to 7 minutes, or until the rice is completely cooked through and cooked through the cauliglies.
Season with salt and pepper to taste.
Serve warm or at room temperature.
